How to Make Ermine Frosting (Flour Buttercream)

How to Make Ermine Frosting (Flour Buttercream)

Ermine frosting, also known as flour buttercream, is a classic frosting that’s smooth, creamy, and less sweet than traditional buttercream. Its unique texture and taste make it a perfect choice for cakes and cupcakes. Here's a step-by-step guide to making this delightful frosting.

Ingredients:

1 cup (240 ml) whole milk
5 tablespoons (40 g) all-purpose flour
1 cup (200 g) granulated sugar
1 cup (230 g) unsalted butter, at room temperature
1 teaspoon vanilla extractPinch of salt

Instructions:

1. Cook the Flour and Milk Mixture

.In a medium saucepan, whisk together the flour and milk until smooth
.Place the saucepan over medium heat and cook, whisking constantly, until the mixture thickens and starts to bubble
.This process usually takes about 5-7 minutes

.The mixture should resemble a thick pudding or paste
.Remove the saucepan from the heat and transfer the mixture to a bowl
.Cover it with plastic wrap, pressing the wrap directly onto the surface to prevent a skin from forming
.Allow the mixture to cool completely to room temperature
.It’s crucial that the mixture is fully cooled before proceeding to avoid melting the butter in the next step.

2. Cream the Butter and Sugar

In a large mixing bowl, beat the room-temperature butter with an electric mixer until it’s light and fluffy, about 3-5 minutes.Gradually add the sugar to the butter, beating well after each addition. Continue to beat the mixture until it’s very light and fluffy, about 5 more minutes.

3. Incorporate the Flour Mixture

Once the flour mixture has cooled completely, add it to the butter and sugar mixture, one spoonful at a time, while beating on medium speed.Continue beating until the frosting is smooth, creamy, and fully combined. The mixture should be light and fluffy, with no grainy texture.

4. Add Flavoring

Add the vanilla extract and a pinch of salt to the frosting, and beat for an additional minute until everything is well incorporated.Taste the frosting and adjust the vanilla or salt if necessary.

5. Use and Store

Your ermine frosting is now ready to use! Spread it over cakes, cupcakes, or any dessert of your choice. If not using immediately, the frosting can be stored in an airtight container in the refrigerator for up to a week. Before using, bring it back to room temperature and re-whip it to restore its creamy texture.

Tips for Success:

Ensure the flour mixture is completely cool before adding it to the butter and sugar to prevent the frosting from becoming runny.Whip the frosting well to achieve a light and airy consistency. Ermine frosting is less sweet and has a silkier texture than traditional buttercream, making it perfect for those who prefer a more balanced sweetness in their desserts.Try flavor variations by adding cocoa powder, almond extract, or other flavorings to customize your frosting.

Ermine frosting, with its smooth texture and balanced sweetness, is a versatile option that pairs beautifully with a wide range of cakes and desserts. Give it a try for your next baking project and enjoy the creamy, delightful results!
