Ingredients

.½ cup brown sugar

.½ cup molasses

.1 teaspoon vanilla extract

.1 cup buttermilk

.½ cup strong brewed coffee, cooled


For the Latte Buttercream Frosting:

.1 cup unsalted butter, softened

.4 cups powdered sugar

.2 tablespoons instant espresso powder

.2 tablespoons hot water

.1 teaspoon vanilla extract

.2 tablespoons heavy cream



For the Topping:

Crushed gingerbread cookiesGround cinnamon for dustingA drizzle of caramel sauce (optional)


Instructions

1. Prepare the Gingerbread Cake: 

.Preheat your oven to 350°F (175°C). Grease and flour two 8-inch round cake pans, or line them with parchment paper. 

.In a medium bowl, whisk together the flour, baking powder, baking soda, ginger, cinnamon, cloves, nutmeg, and salt. Set aside.

.In a large mixing bowl, beat the softened butter and brown sugar together until light and fluffy, about 3-4 minutes.

.Add the egg, molasses, and vanilla extract to the butter mixture, and beat until well combined.

.Gradually add the dry ingredients to the wet ingredients, alternating with the buttermilk and coffee.Begin and end with the dry ingredients.Mix until just combined, being careful not to overmix.

.Divide the batter evenly between the prepared cake pans and smooth the tops.

Bake for 25-30 minutes, or until a toothpick inserted into the center of the cakes comes out clean.

.Allow the cakes to cool in the pans for 10 minutes, then transfer them to a wire rack to cool completely.


2. Make the Latte Buttercream Frosting:

.Dissolve the instant espresso powder in the hot water and set aside to cool slightly.

.In a large mixing bowl, beat the softened butter until creamy and smooth.

.Gradually add the powdered sugar, one cup at a time, beating well after each addition.

.Add the dissolved espresso, vanilla extract, and heavy cream, and beat until the frosting is light and fluffy.

.If the frosting is too thick, add more heavy cream, one tablespoon at a time, until the desired consistency is reached.


3. Assemble the Cake:

.Place one cake layer on a serving plate or cake stand. Spread a thick layer of latte buttercream frosting over the top.

.Place the second cake layer on top, and frost the top and sides of the cake with the remaining buttercream.

.For an extra festive touch, press crushed gingerbread cookies into the sides of the cake.

.Lightly dust the top of the cake with ground cinnamon and drizzle with caramel sauce, if desired.


4. Serve and Enjoy:
