.1-2 tablespoons heavy cream (as needed for consistency)

For the Butterscotch Drizzle:

Remaining butterscotch sauce from the filling2-3 tablespoons heavy cream (to thin the sauce for drizzling)

Instructions

1. Preheat and Prepare:

Preheat your oven to 350°F (175°C). Grease and flour three 8-inch round cake pans, and set them aside.

2. Make the Cake Batter:

In a medium bowl, whisk together the flour, baking powder, and salt.In a large mixing bowl, beat the softened butter, brown sugar, and granulated sugar until light and fluffy.Add the eggs one at a time, beating well after each addition.Mix in the vanilla extract and butter flavoring. In a separate small bowl, whisk together the butterscotch pudding mix, cream soda, and milk until smooth.Gradually add the dry ingredients to the wet ingredients, alternating with the cream soda mixture, beginning and ending with the dry ingredients. Mix until just combined.

3. Bake the Cake:

Divide the batter evenly between the prepared cake pans. Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Allow the cakes to cool in the pans for 10 minutes, then turn them out onto wire racks to cool completely.

4. Prepare the Butterscotch Filling:

In a small saucepan over medium heat, combine the butterscotch chips, heavy cream, and butter. Stir until the chips are melted and the mixture is smooth. Remove from heat and set aside 2 tablespoons of the sauce for the frosting. Let the remaining sauce cool slightly before using it as the cake filling.

5. Assemble the Cake:

Once the cakes are completely cool, place the first layer on a serving plate. Spread a generous amount of the butterscotch filling over the top. Repeat with the second layer, adding more butterscotch filling. Place the final cake layer on top.

6. Make the Butterbeer Frosting:

In a large mixing bowl, beat the softened butter until creamy. Gradually add the powdered sugar, beating until smooth. Add the reserved butterscotch sauce and vanilla extract, and mix until combined. If the frosting is too thick, add heavy cream, one tablespoon at a time, until the desired consistency is reached.

7. Frost the Cake:

Spread the frosting evenly over the top and sides of the cake. For an extra magical touch, drizzle the butterscotch sauce over the top of the cake, allowing it to drip down the sides.

8. Add Final Touches:

For a true Butterbeer experience, garnish the cake with golden sprinkles or edible glitter. You could also add a few Harry Potter-themed decorations, like chocolate wands or golden snitches.
